And for a fun food storage recipe, try either of these two recipes out with potato flakes you may be starting to stock on your shelves (since the cannery now only gives potato flakes, instead of pearls)! :)...

Potato Flakes Chicken
Potato flakes mixed with grated parmesan cheese give this chicken a delicious flavor and a golden, crispy coating.
2/3 cup mashed potato flakes
1/3 cup grated Parmesan cheese
1 teaspoon garlic salt
4 boneless skinless chicken breast halves (8 ounces each)
1/3 cup butter, melted
In a shallow bowl, combine the potato flakes, Parmesan cheese and garlic salt. Dip chicken in butter, then coat with potato flake mixture. Place in a greased 13-in. x 9-in. baking pan. Bake, uncovered, at 350° for 35-40 minutes or until juices run clear. Broil 4 in. from the heat for 3-5 minutes or until lightly browned. Yield: 4 servings.

Swimming Lessons With Barb Johnson:
Location: your pool
Hey everyone I, Barbara Johnson teach swim lessons.
I worked for the City of Scottsdale as a swim instructor and lifeguard, and I have instructed children and adults for many years. I am also a certified CPR Instructor for Scottsdale Healthcare. I do not have my own pool but I will travel. I usually teach private lessons 1 to 2 kids/class. I can make exceptions if you would like to include one or two more. I usually base the amount of lessons on the needs of the child and what the parents are interested in them learning. The classes are 30-45 min and cost $15.00 per class for one child or $10.00 a class for two. And if their are 3-4 in the class then I will charge $7-$8 per lesson. The more children in the class the cheaper the rate. So the final cost for 5 days of 3-4 kids is $35-$40.00. If anyone there is anyone who needs their kids to learn to swim and are short on cash due to the economy then we can work something out confidentially.
I can teach anytime so give me a call and we can work it out.
Thanks
Barbara
If you know of anyone who is interested in swim lessons please pass it on.
