I finally tracked down Pam and got her recipe from the Luau.
Asian Chicken Slaw
1 head cabbage, chopped (or get prepackaged)
2 or 3 green onions, chopped
1 pkg ramen noodles (uncooked, broken up)
1/2 cup sliced almonds
1 cup snap peas, sliced diagonally
1 can chicken (or 2 chicken breasts, cooked and chopped)
1 can mandarin oranges
Dressing
3 Tbsp. rice wine vinegar
1/2 cup oil
2 Tblsp. sugar
1 pkg ramen flavoring (Oriental and beef are best)
salt and pepper to taste
(sometimes I use Trader Joe's Sesame Ginger Soy dressing, which is Fat Free)
Mix the dressing together, Toss all the ingredients and allow to chill for at least 2 hours.
